Not just a single batch, but serious quantities of Christmas cookies &#8211; one year I made 32 different kinds.  In order to have a diverse array of cookies during the holiday season, you need to start early.  Immediately after <a href="http://www.mahalo.com/christmas-cookies">Thanksgiving</a>, bake cookies that get better with age, like <a href="http://www.mahalo.com/how-to-make-pfeffern-sse">Pfeffernusse</a>.  You can also begin making any <a href="http://www.mahalo.com/refrigerator-cookies">refrigerator cookies</a>, shaping the dough and freezing.  About two weeks before Christmas, you can begin making doughs that need to chill before they are rolled out.  Most of these can be refrigerated for several days.  Begin baking a week before Christmas, doing a few recipes each day.  Use a few of your frozen and refrigerated doughs, and make 1-2 cookies that don&#8217;t need advance prep.  If you&#8217;re organized, you&#8217;ll have an impressive array of fresh cookies to get you through the holidays.</p>

Turkey is delicious and the other sides are great, but nothing beats the stuffing in a holiday feast. If you&#8217;re cooking Thanksgiving dinner yourself, the stuffing is the keystone of the meal. Sure the turkey is important, but it&#8217;s pretty easy&#8211;throw it in the oven and go watch a parade. Just don&#8217;t ruin it and you&#8217;ve done your job. The stuffing is what people will notice the most. </p>

Your stuffing choice is a difficult decision. Thanksgiving is a week away and we are all getting ready to make HUGE feasts for friends and family. Everyone loves the classics like: <a href="http://www.mahalo.com/green-bean-casserole">Green Bean Casserole</a>, <a href="http://www.mahalo.com/mashed-potatoes">mashed potatoes</a>, stuffing and,<a href="http://www.mahalo.com/cranberry-sauce">cranberry sauce.</a> Then there are people, like me, who love to shake things up.</p>
<p>Every time I go into my kitchen to cook I remember the words of my parents telling me &#8220;A recipe is just a guideline, change one or two elements and you have something new and exciting&#8221;. This is something that most people are terrified to do. Creating new recipes can be a overwhelming but it is a lot easier than most would think.</p>
<p>We all do it. Make a meal from a recipe and then while eating wonder to yourself &#8220;What if I add this, or change that?&#8221; The key is to not be afraid to try those things. This is something I do rather regularly while making any meal for my family. So I have a few tips to make the journey into the unknown a little easier.</p>
<ul>
<li><strong>Never change or add more than two elements at a time. </strong>This is probably the most important thing to remember because if you start changing or adding too many ingredients you could have a disaster on you hands.</li>
<li><strong>Start slowly</strong>. If it is your first time experimenting with a recipe don&#8217;t start adding off the wall ingredients. Make your changes small and complementary to your main ingredient.</li>
<li><strong>Don&#8217;t mess with the untouchables.</strong> If you are wanting to experiment with any recipes that involve baking soda, salt, yeast, or baking powder you MUST NOT MESS WITH THEM!!! Those ingredients are there to create a chemical reaction, normally for leavening, so until you truly understand how those reactions work DON&#8217;T TOUCH THEM!</li>
<li><strong>Complement don&#8217;t challenge.</strong> Every recipe has a main ingredient, some times two. This is the star, the diva and like real life divas that love to get complements and hate sharing the limelight. It is important to make changes that support your main ingredient and help it shine. Don&#8217;t add anything that will compete with that diva, it could end up being very bad.</li>
<li><strong>Don&#8217;t be afraid to fail.</strong> Bottom line is that when changing recipes there is a good chance that you could end up with something that not even the dog will eat. It&#8217;s a fact of life that sometimes you have to fail, that&#8217;s how you eventually succeed.</li>
</ul>
<p>So maybe you are thinking instead of the traditional cream soup in your green bean casserole you want to try salsa and a little bacon instead.  Or maybe you want to add a few parsnips to your mashed potatoes and french onion soup. Give it a shot, try it out before the big dinner so that you can refine as necessary. You never know you may create a new family favorite.</p>

Even now, I can remember the sweet smell of the sweet potato pies mixing with the savory aroma of pineapple glazed ham. It was a very special time that I&#8217;ll never forget. Now that I&#8217;m a mom, I want to hand my own unique spin on the holidays down to my son and grandchildren to come.</p>
<p>As someone who loves to experience new things, I feel that some times it&#8217;s just fun to reach outside one&#8217;s comfort zone and break tradition. The gentleman in this this video did a little of both.  He grew a 992 pound pumpkin which took fourth place at a fair &#8211; and then blew it up.  Don&#8217;t try this at home!</p>

The weather is turning colder and the streets are beginning to be covered with a blanket of multicolored leaves. It is my favorite season, autumn. For the past 3 years that I was living in the tropical paradise of <a href="http://www.mahalo.com/hawaii">Hawaii</a> I have missed this season most of all. It may sound crazy that after enjoying the amazing warm weather and breath taking landscape of Hawaii that I would be happy to be in the cold of the northeast but it is a welcome experience to me. It is nice to walk in the crisp, fresh air and actually see the changing seasons. It&#8217;s nice to go on a Hayride and actually need a jacket. And it is especially nice to make a big pot of stew and not need to turn up the air conditioning to keep from feeling as if I was crazy.<br />
This season is perfect for <a href="http://www.mahalo.com/how-to-make-soup">soups</a> and stews. To me there is nothing better than coming in from a walk to a big bowl of beef stew or <a href="http://www.mahalo.com/how-to-make-chicken-soup">chicken soup</a> to warm me up. Soups and stews can be an excellent way to give your family all of the most nutritious foods. It can even be a fun creative way to get picky eaters to have their veggies. For those who are watching their waistlines it is possible to take you favorite and sometimes most fattening soups and make them more healthy. Believe it or not it doesn&#8217;t really take much to take a favorite family recipe for a soup or stew or even chili and recreate it to either make to be bit healthier.<br />
Two things that my family look forward to me making once weather turns colder are <a href="http://www.mahalo.com/how-to-make-chili">chili</a> and potato soup. Neither of these are the healthiest choice for us but they sure do taste good and are great at warming you up and filling stomachs. But after spending some time with our doctors my husband and I decided that it is time for these artery clogging, sodium filled favorites to be updated. So the chili that once took two pounds of beef now takes a pound of ground turkey and a pound of ground chicken. The potato soup that once had a pound of bacon, heavy cream and 2 or 3 salt licks, I mean bouillon cubes now takes 3 slices of bacon, low fat milk and low sodium chicken stock. It is simple substitutions like that, that make a big impact on fat and calories in our favorites.<br />
Making soup at home is a quick, easy and healthy way to feed your family and this time of year it is a welcome warm up. Yes some of our favorites may need a few changes to make them a little healthier but it is well worth it.<br />

<p>Potato Soup</p>
<p>3 slices of bacon (pork or turkey) chopped<br />
2-3 medium sized onions, diced<br />
2-3 cups filtered water<br />
2 cups low sodium chicken stock<br />
2-3 pounds russet or yukon gold potatoes, diced<br />
1 cup low-fat milk<br />
3 tablespoons butter<br />
salt and pepper to taste</p>
<p>In a large pot brown bacon until crispy over medium heat. Add onion and sautee until clear. Add water, chicken stock and potatoes and boil until potatoes are fork tender. Reduce heat and add milk and butter, mash majority of potatoes with masher or stick blender to desired consistency. Season with salt and pepper. Serve.</p>
